
Apricot Skewers with Prosciutto

| Dried apricots | 8 |
| Brandy | Enough to soak apricots in |
| Fresh mild cheese- cut into 8 pieces | Quarter pound -100 g- |
| Prosciutto- cut in half lengthwise | 4 slices |
| Wooden skewers | 4 |
| 1 | Soak the apricots in brandy to cover for 10 minutes. |
| 2 | Drain them well- and open them as you might a book -you may need to cut them with a knife to do this-. |
| 3 | Put a piece of cheese in the center of each- roll the apricot up around it- and wrap the apricots with the prosciutto slices- skewering the apricots- two to a skewer- to keep everything together. |
| 4 | Run the skewers under a broiler for a couple minutes -or bake them 2 minutes in a preheated 500 F -250 C- oven-- and they're ready. |
