Apricot Skewers with Prosciutto

I N G R E D I E N T S
Dried apricots 8
Brandy Enough to soak apricots in
Fresh mild cheese- cut into 8 pieces Quarter pound -100 g-
Prosciutto- cut in half lengthwise 4 slices
Wooden skewers 4

1 Soak the apricots in brandy to cover for 10 minutes.
2 Drain them well- and open them as you might a book -you may need to cut them with a knife to do this-.
3 Put a piece of cheese in the center of each- roll the apricot up around it- and wrap the apricots with the prosciutto slices- skewering the apricots- two to a skewer- to keep everything together.
4 Run the skewers under a broiler for a couple minutes -or bake them 2 minutes in a preheated 500 F -250 C- oven-- and they're ready.
