
Tomato Basil Pasta
( YIELD: 4-6 Servings )

| Tomatoes, peeled, seeded, and cut into small dice | 2 Lbs. |
| Extra Virgin Olive Oil | 6 Tbsp. |
| Oregano, dried | 1 tsp. |
| Italian parsley, chopped | 2 Tbsp. |
| Fresh basil leaves, chopped | 2 Tbsp. |
| Garlic clove, peeled and minced | 1 |
| Fresh grated Parmesan cheese | 3 Tbsp. |
| Spaghetti or long pasta | 1 lb. |
| Salt & Pepper | To taste. |
| 1. | In a medium bowl combine all the ingredients, except the pasta. Marinate for about 1 hour at room temperature. |
| 2. | Cook the pasta in abundant boiling salted water until al dente. Drain thoroughly. |
| 3. | Transfer the pasta to a heated serving dish. Add the sauce and toss. |
| 4. | Adjust the seasonings and serve with extra Parmesan cheese on the side. |
