Tomato Basil Pasta
( YIELD: 4-6 Servings )

I N G R E D I E N T S
Tomatoes, peeled, seeded, and cut into small dice 2 Lbs.
Extra Virgin Olive Oil 6 Tbsp.
Oregano, dried 1 tsp.
Italian parsley, chopped 2 Tbsp.
Fresh basil leaves, chopped 2 Tbsp.
Garlic clove, peeled and minced 1
Fresh grated Parmesan cheese 3 Tbsp.
Spaghetti or long pasta 1 lb.
Salt & Pepper To taste.

1. In a medium bowl combine all the ingredients, except the pasta.   Marinate for about 1 hour at room temperature.
2. Cook the pasta in abundant boiling salted water until al dente. Drain thoroughly.
3. Transfer the pasta to a heated serving dish. Add the sauce and toss.
4. Adjust the seasonings and serve with extra Parmesan cheese on the side.
